Sesame Orange Biscuit

Serves 10 – 12.

300ml fresh orange juice, seived.

180ml unhulled tahini.

320 g GF flour mix

1 tbsp baking powder

1 tsp baking soda

1tsp apple cider

orange zest (wash orange first if non-organic orange)

walnuts, roughly chopped.

sesame, heated till fragrant.

(some sort of dried nut. Fig or date perhaps?)

Syrup.

Water

Agave Syrup

Method.

Note: check that your baking powder is working by adding a small piece to water. If it bubbles it is still good to use.

Preheat oven to 175 degrees celcius.

Stir tahini while slowly adding the orange juice until smooth paste is acquired. Add zest. Fold in dry ingredients. Stir in apple cider (activates baking soda). Fold in walnuts. Grease a thin baking tray with rapeseed oil or vegan butter. Dust hands with Gf flour and add the dough to tray. Even out with side of palm. 2 cm thick. Cover the top with sesame seeds. Bake for 40 mins until golden brown. Slightly crunchy.

Syrup.

Add all ing. into a pot. Adjust to sweetness preference. Heat until boiling and then dribble over biscuits.
