The Days They Fill with Cooking and GF Vegan Cornbread.
Drying out Thyme.
GF Vegan Corn Bread.
425g GM Free Polenta/Coarse Corn Meal
100g GF flour.
3 tsp baking powder.
3 tsp baking soda.
3 tbsp salt.
475 liquid (rice/coconut milk)
5 tbsp olive oil
2 tbsp chia seeds, crushed in mortar and pestle, mixed with 6 tbsp water and left to sit for 15 mins.
1 tsp cider vinegar.
Preheat oven to 200 degree celcius. Oil the base and sides of a baking tray.
Measure dry ing. together. Whisk all liquid and chia seeds together.
Put tray in oven to heat for five mins.
Make a well in the dry ingredients and fold in the wet ingredients.
Stir till all is fully incorporated. Mixture should be sloppy.
Remove tray from oven with oven-mit.
Add mixture to tray (it should sizzle slightly) and bake in centre of oven for 30 – 40 mins.
To check if it is cooked, prick centre with a fork. If it removes clean, it is cooked.
